The cable ends sit in a cup that is pulled up as the handbrake is applied. This pulls the handbrake cables which in turn applies the brakes at the rear wheels. A large spring keeps a certain amount of tension in the cables when the handbrake is released so the cables don’t disconnect themselves.

To disconnect the cables, release the handbrake to the normal driving position. Look up into the engine bay, underneath where the handbrake base is. The photos are taken from the top for clearer images.
Reach up and pull the distribution bar downwards.
With the bar held down, push the cables out the side…
…so they disconnect.
The bar can then be released and it’ll spring up and stop.
Where the cables pass through the bracket, you can see a plastic clip. Push in the 3 tabs and push the clip through.
With the tension removed and the cables free it will be possible to disconnect the cables from the rear drums.
Roger F quite rightly says that if you are fitting new handbrake cables, you are better off just cutting the old ones so you can pull the parts out instead of trying to disconnect the plastic clips.
